Description

This apple jam with salted caramel is a poem! I make it every year in autumn when the apples are particularly aromatic. The combination of sweet apples, the slightly tart lemon aroma and the salty caramel is simply irresistible. Preparation with the Thermomix® is very easy and the jam is ideal as a gift from the kitchen or as a special treat for breakfast. It tastes delicious on fresh bread, rolls or croissants. The jam can be prepared well and will keep in the refrigerator for a few weeks.

Ingredients (5 ingredients)

  • 1 piece Lemon
  • 500 g Apples
  • 350 g Gelling sugar
  • 10 piece Cream Caramel Candies
  • 1 tsp Salt

Preparation (8 steps)

Squeeze lemon and prepare apples

Squeeze the lemon and set aside the juice. Peel, quarter and core the apples. Cut two apple quarters into fine cubes and mix with the lemon juice. Roughly chop the remaining apple pieces.

Chop coarse apple pieces

Place the coarsely chopped apple pieces and gelling sugar in the mixing bowl and chop for 5 sec./speed 5.

Simmer apple pieces

Thermomix® Setting
20 min/212°F/Speed 2 100

Close the mixing bowl and simmer the apple pieces for 20 min./100°C/speed 2.

Melt caramel candies

Coarsely chop the cream caramel candies and melt in a separate pan over medium heat. Stir constantly so that they do not burn.

Refine caramel sauce

Once the candies have melted, add the salt and mix well. Set the caramel sauce aside.

Purée apple pieces

30 sec/Speed 8

After the cooking time, purée the apple pieces in the mixing bowl for 30 sec./speed 8.

Add apple cubes

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add the fine apple cubes to the mixing bowl and stir in for 5 min./90°C/reverse rotation speed 1.

Fill jam

Immediately fill the hot apple jam into clean jars. Finally, distribute the caramel sauce evenly over the jars. Close the jars and turn them upside down for 5 minutes, then turn them over and let them cool.
