  • 1 piece Lemon
  • 170 g brown Sugar
  • to taste Cinnamon
  • 1 Pck. Vanilla sugar
  • 200 g Low-fat quark
  • 150 g Whipping cream
  • 1 tbsp Butter
  • 100 g Almond slivers
  • 40 g Powdered sugar
  • 50 ml Water

Prepare apples

Peel, core and dice the apples. Halve the lemon and squeeze out the juice. Drizzle the apple cubes with the lemon juice to prevent browning.

Cook applesauce

15 min/212°F/Speed 1 100

Put the apple cubes, 120 g brown sugar, some cinnamon and ½ packet of vanilla sugar together with 50 ml of water in the mixing bowl and cook for 15 min./100°C/speed 1.

Puree applesauce

After cooking, puree the applesauce for 10 sec./speed 8.

Reduce applesauce

5 min/212°F/Speed 1 100

Simmer the applesauce for a further 5 min./100°C/speed 1 without the measuring cup in the lid so that excess liquid can evaporate.

Prepare quark cream

Thermomix® Setting
20 sec/Speed 3

Put the low-fat quark, 50 g brown sugar, some cinnamon and the remaining ½ packet of vanilla sugar in the mixing bowl and stir for 20 sec./speed 3. Empty the mixing bowl and transfer the cream.

Whip cream

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Add the whipping cream to the mixing bowl and whip until stiff for 2 min./speed 3.5. Keep an eye on the cream so that it doesn't turn into butter.

Fold in cream

Carefully fold the whipped cream into the quark cream with a spatula.

Make almond brittle

Put the almond slivers and butter in a pan and roast over medium heat. Sprinkle the powdered sugar over it and let it caramelize while stirring. Then let it cool on a piece of baking paper.

Layer dessert

Layer applesauce and cream alternately in dessert glasses. Finally, sprinkle with the almond brittle and serve.
