Description

This chai cream with milk foam is a wonderfully aromatic dessert that is especially warming in the cold season. The combination of chai spices and creamy consistency makes it a real treat. I like to make this cream when I want to conjure up something special for my family. The preparation is very simple and can be done in no time at all with the Thermomix®. The milk foam on top makes the dessert a small highlight. Perfect as the crowning finale of a festive menu or simply for cozy hours. A touch of cocoa rounds off the whole thing.

Ingredients (6 ingredients)

  • 0.5 l Milk
  • 0.1 l Milk
  • 30 g Cornstarch
  • 100 g Chai powder (instant spiced tea mixture)
  • 100 g Whipping cream
  • Cocoa for dusting

Heat milk and chai powder

Thermomix® Setting
7 min/194°F/Speed 2 90

Add 500 ml milk and 100 g chai powder to the mixing bowl and heat for 7 min./90°C/speed 2. Make sure that the chai powder dissolves well.

Stir in starch and thicken

Thermomix® Setting
1 min/212°F/Speed 3 100

Stir 30 g cornstarch and 3-4 tbsp water until smooth in a small bowl. Add the stirred starch to the mixing bowl and stir in for 1 min./100°C/speed 3 until the cream thickens.

Let the cream cool

Pour the chai cream into a bowl and let it cool, stirring occasionally. This prevents a skin from forming.

Whip the cream until stiff

2 min/Speed 3.5

Put 100 g whipping cream in the mixing bowl, insert the butterfly and whip until stiff for 2 min./speed 3.5. Carefully fold the whipped cream into the cooled chai cream.

Portion and cool the cream

Fill the chai cream into 4 glasses and chill for at least 1 hour.

Prepare milk foam

Thermomix® Setting
3 min/140°F/Speed 2 60

Put 100 ml milk in the mixing bowl and heat for 3 min./60°C/speed 2. Then froth the milk vigorously with a whisk or milk frother.

Serve

Distribute the milk foam on the glasses, dust with cocoa and serve immediately. Fine pastries go well with it.
