This Thermomix® recipe for chocolate mousse with cinnamon-Cantuccini is a festive dessert with bittersweet chocolate, eggs, cream and cinnamon. Preparation takes about 30 minutes, cooling time is about 12 hours, yields 10 servings. Ideal as a sweet sin for special occasions, especially during the Christmas season.   • 250 g Bittersweet chocolate
  • 2 Blatt Gelatin
  • 3 Eggs
  • 120 g Sugar
  • 750 g Cream
  • 0.5 TL Cinnamon
  • 10 Cantuccini

Preparation (10 steps)

Melt chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Add 250 g bittersweet chocolate in pieces to the mixing bowl and chop for 10 sec/level 8. Then melt for 3 min./50°C/level 2. Use the spatula to push down from the edge and repeat the process if necessary until the chocolate is completely melted.

Soak gelatin

Soak 2 sheets of gelatin in cold water. Perform this step without Thermomix.

Beat eggs and sugar

Add 3 eggs and 120 g sugar to the mixing bowl and insert the butterfly. Beat until frothy for 7 min./70°C/level 3.

Dissolve gelatin

Thermomix® Setting
1 min/122°F/Speed 2 50

Squeeze out the soaked gelatin and add it to the egg-sugar mixture in the mixing bowl. Stir for 1 min./50°C/level 2 until the gelatin has completely dissolved.

Mix in chocolate

Thermomix® Setting
30 sec/Speed 3

Add the melted chocolate to the egg-gelatin mixture in the mixing bowl and stir for 30 sec./level 3. Remove butterfly.

Beat cream

Thermomix® Setting
2 min/Speed 3.5

Add 600 g cream to the mixing bowl and insert the butterfly. Beat stiff for 2 min./level 3.5. Keep an eye on the consistency so that the cream does not turn into butter.

Fold in cream

Carefully fold the whipped cream into the chocolate mixture with a spatula. Perform this step without Thermomix.

Chill

Pour the mousse into a bowl or individual glasses and let it set in the refrigerator, preferably overnight (at least 12 hours). Perform this step without Thermomix.

Prepare cinnamon cream

Thermomix® Setting
1 min 30 sec/Speed 3.5

Add 150 g cream and 0.5 tsp cinnamon to the mixing bowl and insert the butterfly. Beat stiff for 1 min. 30 sec./level 3.5. Keep an eye on the consistency so that the cream does not turn into butter.

Arrange

Arrange the mousse on plates, garnish with the cinnamon cream and crumble the Cantuccini over it. Perform this step without Thermomix.
