Description

This speculaas cream with cookie crumbs is a Christmas dessert that is quick to prepare in the Thermomix®. The main ingredients are mascarpone, low-fat quark, speculaas, cane sugar and a hint of lemon. The preparation time is 20 minutes, the cooling time is about 2 hours, so a total of 140 minutes should be planned. The recipe yields 6 servings and is ideal as a festive dessert for the whole family.

Ingredients (10 ingredients)

  • 1.5 EL ground coffee
  • 1 Stück Egg (room temperature)
  • 50 g Cane sugar
  • 1 Pck. Vanilla sugar
  • 250 g Mascarpone
  • 200 g Low-fat quark
  • 1 Stück Lemon
  • 200 g Speculaas
  • 1 TL Cinnamon
  • 0.5 TL Unsweetened cocoa

Preparation (9 steps)

Prepare coffee and let cool

Brew 1.5 tbsp of ground coffee and reduce to approx. 100 ml. Let the coffee cool completely.

Prepare egg yolk

Separate one egg. Use the egg white for something else. Place the egg yolk in the mixing bowl.

Beat egg yolk

Add 50 g cane sugar and 1 packet of vanilla sugar to the egg yolk in the mixing bowl and beat for 3 min/speed 4.

Add mascarpone and quark

Add 250 g mascarpone and 200 g low-fat quark to the mixing bowl.

Stir in cream

Thermomix® Setting

Add the juice of half a lemon and stir for 30 sec/speed 3 until a smooth cream is formed.

Layer speculaas

Briefly dip 160 g speculaas cookies in the cold coffee and layer alternately with the mascarpone-egg cream in a shallow bowl.

Chill

Place the bowl with the tiramisu in the refrigerator for at least 2 hours.

Crumble speculaas

Put the remaining 200 g of speculaas cookies in the mixing bowl and chop for 5 sec/speed 5.

Decorate tiramisu

Spread the crumbled speculaas cookies over the tiramisu. Mix 1 tsp cinnamon and 0.5 tsp unsweetened cocoa and sprinkle over it. Serve.
