  • 250 g Risotto rice
  • 80 g Grated Parmesan cheese
  • 2 EL Butter
  • 125 g Mini mozzarella balls
  • 50 g Flour
  • 80 g Panko breadcrumbs
  • 1 Stück Egg
  • Salt
  • Pepper
  • Vegetable oil

Cook the rice

Put 250g risotto rice into the simmering basket and cook according to package directions in the Thermomix.

Prepare the rice mixture

Place the cooked rice, 80g grated Parmesan cheese, and 2 tbsp butter into the mixing bowl and mix for 10 sec/speed 3. Season with salt and pepper.

Form the arancini

With damp hands, wrap 70-80g of the rice mixture around a mini mozzarella ball and form rice balls.

Bread the arancini

Place 50g flour and 80g panko breadcrumbs on separate plates. Whisk 1 egg in a bowl. First coat the arancini in flour, then in the whisked egg, and then in panko breadcrumbs.

Fry the arancini

Heat vegetable oil in a saucepan and fry the arancini in batches for about 3 minutes until crispy. Then remove with a slotted spoon and drain on paper towels. Note: Frying takes place outside of the Thermomix.
