Description

This salty Christmas tree is a delicious and scenic idea to enrich the holiday table! Prepared with two rolls of puff pastry, a creamy filling of ricotta, pesto and parmesan, and decorated with cherry tomatoes, it is an appetizer simple to make but of great effect. I always prepare it for Christmas Eve, and it disappears in an instant! The combination of pesto with ricotta is delicious, and the golden puff pastry makes it all irresistible. Perfect to share with friends and relatives, this salty Christmas tree is a tasty alternative to the usual snacks.

  • 2 rotolo puff pastry
  • ricotta
  • cherry tomatoes
  • Grated Parmigiano Reggiano
  • basil pesto
  • 1 piece egg

Preparation of the pesto (optional)

If you want to prepare the pesto at home, insert about 50 g of basil, abundant olive oil, half a clove of garlic (if desired), a pinch of salt and a sprinkling of pepper into the bowl. Blend for 20 Sek./Stufe 8. If necessary, add one or two tablespoons of cold water to make the pesto more fluid.

Preparation of ricotta and pesto cream

Add the ricotta and grated Parmesan to the pesto. Mix for 15 Sek./Stufe 4 until a smooth, lump-free cream is obtained. Transfer the cream to a bowl and set aside.

Filling and cutting the puff pastry

Unroll a rectangle of puff pastry on its baking paper. Spread the pesto and ricotta cream evenly over the entire surface. Cover with the other roll of puff pastry. With a sharp knife, carve out a triangle using the entire length of the puff pastry.

Creation of the trunk and decorations

From the outer parts of the puff pastry, make a square that will become the trunk of the Christmas tree and one or more stars to decorate the tree as desired. Set aside.

Creation of the branches

Lightly mark, without completely incising, a central strip that starts from the tip and reaches the trunk, about 2 cm wide. With a pizza cutter, cut the branches, about 2 cm thick.

Rolling up the branches

Roll each branch onto itself, without crushing too much and always in the same direction. In the longer branches you will be able to make two turns, while in the smaller ones one. The last branches should not be rolled up because they are too small.

Decoration and brushing

Shell an egg in a bowl and beat it with a fork. Brush the surface of the puff pastry Christmas tree with the beaten egg. Decorate the tree with red cherry tomatoes cut in half, as if they were real Christmas balls.

Baking in the oven

Bake the puff pastry tree in a preheated oven at 200°C in fan mode for about 25 minutes, or until golden brown.
