Description

This red lentil curry soup with coconut milk is a true delight and super easy to prepare. The combination of red lentils, curry and creamy coconut milk makes it an absolute feel-good dish. I love how quickly this soup is on the table - perfect for a stressful evening! A touch of chili provides the desired spiciness, which can be adjusted to taste. The soup is naturally vegetarian and can easily be made vegan. A dash of lime juice rounds off the dish perfectly. Try it, you will be thrilled!

Ingredients (14 ingredients)

  • 1 piece Onion, finely diced
  • 4 clove Garlic, finely diced
  • 500 g Lentils, red
  • 2 can Tomatoes, chopped
  • 2 can Coconut milk, unsweetened
  • 1 tbsp Curry powder, heaped
  • 1 tbsp Turmeric, heaped
  • Vegetable broth, instant
  • Salt
  • Pepper
  • 1 pinch Sugar
  • Chili pepper, finely diced
  • Olive oil
  • Water

Preparation (5 steps)

Chop onions and garlic

Add 1 onion, finely diced, and 4 cloves of garlic to the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté onions and garlic

Add some olive oil to the mixing bowl and sauté the chopped onions and garlic for 3 min./120°C/speed 1.

Add spices and sauté briefly

Add 1 tbsp curry powder, heaped, and 1 tbsp turmeric, heaped, and sauté for 1 min./120°C/speed 1.

Cook soup

Add 500 g red lentils, 2 cans chopped tomatoes, 2 cans unsweetened coconut milk, some vegetable broth, salt, pepper and a pinch of sugar to the mixing bowl. Rinse the tomato and coconut milk cans with water and add 3 cans of water. Cook for 20 min./100°C/speed 1.

Add some finely diced chili pepper and simmer for 5 min./100°C/speed 1. Season with salt and pepper.
