Description

This woodruff punch is an absolute spring classic! I make it every year as soon as the woodruff sprouts. The scent is simply unmistakable and reminds me of my childhood. It is important to let the woodruff wilt a little before using it so that it can develop its full aroma. The fresh raspberries give the punch a fruity note and make it a real eye-catcher. Perfect for a garden party or a cozy brunch with friends. The preparation is super easy and quick, so you have more time to enjoy!

Ingredients (4 ingredients)

  • 1 Bd. Woodruff
  • 2 l Dry white wine
  • 1 l Semi-dry sparkling wine
  • 1 Handvoll Raspberries

Prepare woodruff

Wash the bunch of woodruff thoroughly and remove the coarse stems. Let the leaves wilt overnight so that the aroma develops better.

Extract woodruff aroma

Tie the wilted woodruff leaves together into a bundle. Add 2 l of dry white wine to the mixing bowl. Hang the woodruff bundle upside down in the mixing bowl so that the cut surfaces do not come into contact with the wine. Leave to steep for 30 min./no temperature/speed 1 Left rotation.

Refine punch

Remove the woodruff bundle from the mixing bowl. Carefully stir in 1 l of semi-dry sparkling wine and 1 handful of raspberries. Serve the punch immediately.
