Description

This Miso noodle soup is real soul food! I love how quickly it is prepared and how versatile it can be with different toppings. The base is an aromatic broth with miso paste, which gives the dish a wonderful depth. This is accompanied by tender noodles and crunchy vegetables. The soup tastes particularly good with fried mushrooms and chicken breast. A soft-boiled egg should of course not be missing! If you like it spicy, you can sprinkle a few chili flakes over it. Perfect for a cold day or when you need something quick.

Ingredients (14 ingredients)

  • 1 piece Onion
  • 2 clove Garlic
  • 1 piece Ginger
  • Soy sauce
  • Rice wine
  • 2 Liter Vegetable broth
  • 2 tbsp Miso paste
  • 300 g Ramen noodles
  • Oil for frying
  • Mushrooms
  • 250 g Chicken breast
  • Sesame oil
  • Chili flakes
  • 4 piece Egg

Preparation (4 steps)

Chop onion, ginger and garlic

Peel and quarter the onion and place in the mixing bowl together with the garlic cloves and ginger. Chop for 3 seconds/speed 5. If necessary, push down with the spatula.

Sauté the vegetables

Add some oil to the mixing bowl and sauté the chopped ingredients for 3 minutes/120°C/speed 1.

Prepare broth

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the vegetable broth or chicken broth and soy sauce to the mixing bowl and simmer for 10 minutes/100°C/speed 1.

Add miso paste

Thermomix® Setting
1 min/176°F/Speed 2 80

Pass the miso paste through a sieve into the mixing bowl and stir for 1 minute/80°C/speed 2 until it has dissolved. Season with rice wine and soy sauce.
