Description

This vegan Asia soup is an absolute treat! With creamy coconut milk, fresh vegetables and a touch of lime, it's perfect for a quick and healthy lunch or a light dinner. I love how the spiciness of the curry paste harmonizes with the sweetness of the rice syrup. Preparation in the Thermomix® is super easy and quick, so you can have a delicious meal on the table in no time at all. The soup tastes particularly delicious with fresh herbs as a topping. An absolute favorite recipe that I always enjoy preparing!

Ingredients (13 ingredients)

  • Coconut fat
  • 1 piece Onion
  • 1 piece Pointed pepper
  • 1 tsp Curry paste hot
  • 2 clove Garlic
  • 2 cm Ginger
  • 4 Stange Spring onion
  • 1 piece Pak Choi
  • 800 ml Vegetable broth
  • 1 can Coconut milk
  • 1 piece Lime
  • Rice syrup or agave nectar
  • 200 g Rice noodles

Preparation (9 steps)

Prepare onion and pepper

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 4

Put 1 onion in the mixing bowl and chop for 3 sec./level 5. Add 1 pointed pepper in pieces and chop for another 3 sec./level 4. Use the spatula to push everything down from the edge.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add some coconut fat to the mixing bowl and sauté for 3 min./120°C/level 1.

Add garlic and ginger

Thermomix® Setting
3 sec/Speed 7

Put 2 cloves of garlic and 2 cm of ginger in the mixing bowl and chop for 3 sec./level 7. Use the spatula to push everything down from the edge.

Add and sauté curry paste

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tsp curry paste (hot) and sauté for 3 min./120°C/level 1. Mix everything well with the spatula.

Deglaze with vegetable broth and coconut milk

Add 800 ml vegetable broth and 1 can coconut milk to the mixing bowl.

Add spring onions and pak choi

Cut 4 spring onions into rings and 1 pak choi into strips. Add both to the mixing bowl.

Cook soup

10 min/212°F/Speed 1 100

Cook for 10 min./100°C/level 1.

Add and cook rice noodles

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add 200 g rice noodles to the mixing bowl and cook for another 5 min./100°C/reverse rotation level 1.

Season and serve

Thermomix® Setting
10 sec/Speed 2

Add juice of 1 lime and 1 splash of rice syrup or agave nectar to the mixing bowl and stir for 10 sec./level 2. Serve the soup hot.
