Description

This creamy rice with curry vegetables and mushrooms is an explosion of flavor and color. I have been preparing this recipe for years and it is always a success at home. The combination of curry with fresh vegetables and mushrooms creates a comforting and nuanced dish. It is perfect for a weekday meal or to surprise your guests with a different vegetarian dish. In addition, it is a very versatile recipe, you can add other seasonal vegetables or even a little tofu to make it even more complete. Go ahead and try it, you will love it!

Ingredients (12 ingredients)

  • 200 gramos Rice
  • 100 gramos Mushrooms
  • 1 litro Vegetable broth
  • 1 piece Zucchini
  • 1 piece Onion
  • 1 piece Green pepper
  • 1 piece Red pepper
  • 1 clove Garlic
  • 500 gramos Natural tomato
  • 1 cucharadita Curry
  • 2 cucharadas soperas Olive oil
  • 1 pinch Salt

Preparation (8 steps)

Preparation of the vegetables

Cut the zucchini into small cubes, the onion into small squares and the green and red peppers into small squares, removing the seeds beforehand. Reserve.

Sauté the onion

Add 2 tablespoons of olive oil to the Thermomix bowl. Incorporate the chopped onion and sauté for 5 Min./120°C/Stufe 1.

Add the rest of the vegetables

Add the zucchini, green and red peppers, and mushrooms (whole or chopped) to the Thermomix bowl. Cook for 10 Min./120°C/Stufe 1.

Incorporate the tomato and garlic

Add the 500 grams of natural tomato and 1 crushed garlic clove to the Thermomix bowl. Cook for 30 Min./100°C/Stufe 1.

Adjust the salt

Add 1 pinch of salt to taste and mix for 5 Seg./Stufe 3.

Add the rice and curry

Thermomix® Setting
2 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the 200 grams of rice and 1 teaspoon of curry to the Thermomix bowl. Stir for 2 Min./100°C/Stufe 1/Linkslauf so that the rice is stir-fried with the vegetables.

Cook the rice

18 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 1 liter of vegetable broth to the Thermomix bowl. Cook for 18 Min./100°C/Stufe 1/Linkslauf.

Pour the rice into a casserole and let it rest for 5 minutes uncovered before serving.
