Description

This vegetable paella with thyme is a recipe that I have adapted to prepare in the Thermomix®. The combination of bomba rice with fresh vegetables and the aroma of thyme make it a delicious and comforting dish. It is perfect for a weekend meal or a light dinner. The original recipe includes mussels and prawns, but it can be easily adapted for a vegetarian version by omitting these ingredients. Go ahead and try it, you will love it! It's also a great way to incorporate more vegetables into your diet. The preparation is simple and the result is a dish full of flavor and color.

Ingredients (15 ingredients)

  • 1 puñado bomba rice
  • 1 rama thyme
  • onion
  • green garlic
  • 1 clove garlic
  • 1 puñado green beans
  • 1 puñado peas
  • 4 piece mussels
  • 4 piece prawns
  • 1 gr saffron
  • food coloring
  • Extra virgin olive oil
  • 0.5 l thyme broth from the previous day
  • 2 piece ripe tomatoes
  • 1 hoja bay leaf

Preparation (12 steps)

Prepare the ingredients

Gather all the ingredients: bomba rice, fresh thyme, onion, green garlic, a clove of garlic, green beans, peas, mussels, prawns, saffron, food coloring, extra virgin olive oil, thyme broth, ripe tomatoes and a bay leaf. Wash and prepare the vegetables.

Chop the garlic and sauté

Place 1 clove of garlic in the bowl and program 3 seconds/speed 7. With the spatula, lower the remains from the walls of the bowl. Add a splash of extra virgin olive oil and program 3 minutes/120°C/speed 1.

Add shellfish and cook

5 min/248°F/Velocidad 1/Giro a la izquierda 120 Reverse

Add the bay leaf, 4-5 mussels and 4-5 prawns to the bowl. Program 5 minutes/120°C/speed 1/reverse rotation. Remove the shellfish and reserve.

Sauté onion and thyme

Add onion to taste and a sprig of thyme to the bowl. Program 5 minutes/120°C/speed 1. Meanwhile, heat 1/2 liter of thyme broth in the microwave or in a saucepan.

Add vegetables and cook

Add green beans to taste, peas to taste and green garlic to taste to the bowl. Program 5 minutes/120°C/speed 1.

Add tomato

Add 2 chopped ripe tomatoes to the bowl. Program 3 minutes/120°C/speed 1.

Add rice and sauté

Thermomix® Setting

Add 1 handful of bomba rice to the bowl. Program 2 minutes/120°C/speed 1.

Add saffron and food coloring

Add 1 gr of saffron and food coloring to taste to the bowl. Mix with the spatula.

Add broth and cook

5 min/212°F/Velocidad 1 100

Pour 1/2 liter of preheated thyme broth into the bowl. Program 5 minutes/100°C/speed 1.

Add shellfish and finish cooking

Thermomix® Setting
12 min/212°F/Velocidad 1/Giro a la izquierda 100 Reverse

Add the reserved mussels and prawns to the bowl. Program 12 minutes/100°C/speed 1/reverse rotation. If you see that the broth is consumed, add a little more.

Rest

Turn off the Thermomix and let the paella rest for 5 minutes inside the bowl.

Serve

Serve the vegetable paella with hot thyme and enjoy.
