Description

This recipe for artichokes in French style is a true classic and simply tastes delicious! The fresh artichokes are cooked until tender and served with a fine vinaigrette. I love to pluck the leaves individually and dip them in the vinaigrette - a delight! The preparation takes a little time, but it's definitely worth it. Perfect as an appetizer or light main course in the spring. The vinaigrette can also be prepared well in advance.

Ingredients (7 ingredients)

  • 4 piece Artichokes (fresh)
  • 1 piece Lemon
  • 1 piece Shallot
  • 1 tsp Dijon mustard
  • 2 tbsp White wine vinegar
  • 6 tbsp Olive oil
  • 1 tsp Honey

Preparation (8 steps)

Prepare artichokes

Remove the outer, hard leaves from the artichokes. Cut off the tips of the artichoke leaves with scissors by about 2 cm. Shorten the stem and peel the stem ends if they are fibrous.

Rub artichokes

Halve the lemon and rub the artichokes with it so that they do not turn brown. Squeeze out the lemon and set the juice aside.

Cook artichokes

Fill a large pot with water. Add lemon juice, 1 tsp salt, bay leaves and artichokes. Bring the water to a boil in the mixing bowl: 20 Min./100°C/speed 1.

Simmer artichokes

Reduce heat to medium temperature and simmer the artichokes for about 30-40 minutes until the leaves can be easily pulled off. Check with a knife whether the inside (the artichoke heart) is soft. Then remove the cooked artichokes from the water and drain well.

Chop shallot

Peel the shallot and place in the mixing bowl. Chop for 3 sec./speed 5.

Prepare vinaigrette

20 sec/Speed 3

Add mustard, vinegar, olive oil and honey to the mixing bowl. Stir for 20 sec./speed 3. Add the chopped shallot and stir in for 5 sec./speed 2 reverse. Season the vinaigrette with salt and pepper.

Add the chopped shallot and stir in for 5 sec./speed 2 reverse. Season the vinaigrette with salt and pepper.

Serve

To serve, arrange the artichokes on a plate and serve the vinaigrette in small bowls. Then you pull off the individual leaves of the artichokes, dip them in the vinaigrette and pull the tender flesh on the underside of the leaf with your teeth. Once all the leaves have been removed, you can enjoy the artichoke heart and base after removing the fine hairs inside.
