Classic asparagus dish with homemade Hollandaise sauce.

Ingredients (10 ingredients)

  • 1 kg Asparagus, white
  • 0.5 piece Lemon
  • 1 pinch Salt
  • 1 pinch Sugar
  • 150 g Butter
  • 3 piece Egg yolk
  • 2 tbsp Asparagus stock
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 1 pinch Pepper

Preparation (6 steps)

Prepare asparagus

Peel the asparagus and cut off the ends. Put the asparagus peels and ends into the mixing bowl.

Prepare asparagus stock

Add 500 ml water, 1 pinch of salt, 1 pinch of sugar and 1/2 lemon (in slices) to the asparagus peels and ends in the mixing bowl. Insert the simmering basket and place the peeled asparagus in it.

Cook asparagus

Cook the asparagus for 20 Min./Varoma/Speed 1. After cooking, carefully remove the asparagus and the simmering basket and keep warm. Collect the asparagus stock and set aside.

Prepare Hollandaise sauce

Put 150 g butter in the mixing bowl and melt for 3 Min./50°C/Speed 1.

Emulsify Hollandaise sauce

Thermomix® Setting
4 min/158°F/Speed 4 158°F

Put 3 egg yolks, 2 tbsp asparagus stock, 1 tbsp lemon juice, 1/2 tsp salt and 1 pinch of pepper in the mixing bowl. Stir in the melted butter for 4 Min./70°C/Speed 4. Leave the measuring cup in place.

Serve

Arrange the asparagus on plates and serve with the Hollandaise sauce.
