Description

This Chicken Strips with fresh asparagus and colorful vegetables is a quick and easy dish for spring. Preparation in the Thermomix® saves time and ensures a creamy result. Ideal as a light main course for the whole family. The dish is rich in proteins and vitamins.

Ingredients (11 ingredients)

  • 500 g white asparagus
  • 300 g Peas and carrots - frozen
  • 400 g Chicken breast fillet
  • 2 EL Olive oil
  • 2 TL Flour
  • 300 ml Vegetable broth
  • 150 g Sour cream
  • 1 TL Curry
  • 1 EL chopped parsley
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (7 steps)

Prepare asparagus

Peel 500 g white asparagus and cut off the woody ends. Cut the asparagus spears diagonally into small pieces. Thaw 300 g peas and carrots (frozen). Cut 400 g chicken breast fillet into narrow strips.

Sear chicken

Heat half of 2 tbsp olive oil in a pan and sauté the chicken strips in it until golden brown. Then remove the chicken from the pan and set aside.

Sauté asparagus

Put the remaining part of 2 tbsp olive oil in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook asparagus and vegetables

10 min/212°F/Speed 1 100

Add the chopped asparagus to the mixing bowl and cook for 10 min./100°C/speed 1. Then add the thawed peas and carrots.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 2 tsp flour to the mixing bowl and mix for 20 sec./speed 3. Add 300 ml vegetable broth and simmer for 5 min./100°C/speed 2.

Refine and add chicken

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add 150 g sour cream, 1 tsp curry and 1 tbsp chopped parsley to the mixing bowl and stir in for 1 min./90°C/reverse rotation speed 1. Add the fried chicken and heat for 2 min./90°C/reverse rotation speed 1.

Season the asparagus and chicken pan with salt and pepper and serve.
