Description

This spaghetti carbonara recipe is an Italian classic that I often prepare at home. Authentic carbonara does not contain cream, only egg, cheese and guanciale, which gives it an intense and delicious flavor. It is a perfect dish for a quick and comforting meal, ideal for pasta lovers. The key is to use good quality ingredients and follow the steps carefully to obtain a creamy sauce and an unmatched flavor. Go ahead and try this traditional recipe and surprise your guests!

Ingredients (7 ingredients)

  • 320 g Spaghetti
  • 8 piece Egg yolk
  • 120 g Guanciale (cured pork cheek)
  • 120 g Parmesan cheese
  • to taste Ground black pepper
  • 35 g Salt for cooking the pasta
  • 1120 g Water for cooking the pasta

Preparation (5 steps)

Cook the pasta

Thermomix® Setting
10 min/Varoma/Velocidad 0 Varoma

Pour 1120 g of water and 35 g of salt into the bowl. Program 10 Min./Varoma/Speed 0 or until the water boils. Add the spaghetti through the top opening and cook for 6-7 minutes at 100°C/Spoon Speed, according to the manufacturer's instructions. Strain and reserve.

Brown the guanciale

Thermomix® Setting
6 min/Varoma/Velocidad 1 Varoma

Cut the guanciale into 5mm cubes. Place the guanciale in the bowl and program 6 Min./Varoma/Speed 1 or until golden brown. Remove the guanciale and fat from the bowl and reserve separately.

Prepare the sauce

In the same bowl, add 8 egg yolks, 120 g of grated Parmesan cheese, the reserved guanciale fat and part of the browned guanciale (reserve the rest for garnish). Add salt to taste and generously freshly ground black pepper.

Bind the sauce

Thermomix® Setting
2 min/140°F/Velocidad 1 60

Add a little of the pasta cooking water to the bowl and program 2 Min./60°C/Speed 1 to bind the sauce.

Serve

Serve the sauce immediately over the hot spaghetti. Garnish with the reserved guanciale and a little more freshly ground black pepper.
