Description

This autumnal squash-potato-casserole is true soul food! The combination of sweetish squash, hearty potatoes, and spicy fried sausage makes it a perfect dish for cozy evenings. I love how the creamy cream sauce holds everything together and gives the casserole a wonderful consistency. The preparation takes a little time, but it's definitely worth it! The casserole tastes especially delicious when refined with fresh herbs such as thyme or rosemary. Ideal for a relaxed dinner with friends or family.

Ingredients (12 ingredients)

  • 600 g firm cooking potatoes
  • 1 pinch Salt
  • 0.5 piece Hokkaido squash
  • 1 Stange Leek (leek)
  • 250 g Cherry tomatoes
  • 2 piece fine fried sausages (à 110 g)
  • 2 tbsp Oil
  • 2 tbsp Tomato paste
  • 400 g Whipping cream
  • 200 ml Vegetable stock
  • 1 pinch Pepper
  • 2 piece Spring onions

Preparation (9 steps)

Prepare potatoes

Peel, wash and halve 600 g firm cooking potatoes. Put the potatoes in a saucepan, cover with salted water and cook for about 10 minutes. Then drain and drain.

Prepare squash and leek

Wash ½ Hokkaido squash, halve, core and cut the flesh into wedges. Clean, wash and cut 1 stalk of leek (leek) into rings. Wash 250 g cherry tomatoes.

Put vegetables in casserole dish

Place the drained potatoes, squash wedges, leek rings and cherry tomatoes in a casserole dish (20 x 30 cm).

Fry fried sausage

Cut 2 fine fried sausages (à 110 g) into slices. Heat 2 tbsp oil in a pan and fry the fried sausage slices in it for about 3 minutes. Then remove and add to the vegetables in the casserole dish.

Sauté tomato paste

Put 2 tbsp tomato paste in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare cream sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 400 g whipping cream and 200 ml vegetable stock to the mixing bowl. Season with salt and pepper. Bring to a boil and reduce for 5 min./100°C/speed 2.

Season and distribute cream sauce

Season the cream sauce and pour over the vegetables and sausage in the casserole dish.

Bake casserole

Bake the casserole in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 30–40 minutes.

Prepare and serve spring onions

Clean, wash and cut 2 spring onions into fine rings. Remove the casserole from the oven, sprinkle with spring onions and serve.
