Description

This dish of poultry gratinated with Gruyere is a true comforting delight, perfect for autumn evenings or festive meals. The poultry, simmered in a broth flavored with white wine and thyme, becomes incredibly tender. The creamy sauce with egg yolks and grated Gruyere brings unparalleled richness and flavor. I have been making this recipe for years and it always makes a splash with my guests. Feel free to use a good quality dry white wine for optimal taste. A hearty and tasty dish that will delight poultry and cheese lovers!

Ingredients (11 ingredients)

  • to taste Salt or fine salt
  • to taste Pepper
  • to taste Butter
  • 100 g Grated Gruyere
  • to taste Thyme
  • 1 container Fresh cream
  • 2 piece Egg yolks
  • 2 dl Poultry broth
  • 0.5 bouteille Good quality dry white wine
  • 1 c. à s. Flour
  • 1 piece Cut up chicken

Preparation (7 steps)

Poultry and flour

Brown the pieces of poultry in a pan with butter until they are golden brown on all sides. Then sprinkle with 1 tbsp of flour and stir regularly for about 1 minute to coat the poultry well.

Adding wine and broth

Pour ½ bottle of good quality dry white wine and 2 dl of poultry broth into the Thermomix bowl. Add thyme, salt and pepper. Place the pieces of poultry in the Varoma.

Steaming

Close the Varoma and steam for 40 minutes at Varoma temperature, Stufe 1.

Preparing the cheese sauce

Gently remove the poultry from the Varoma and keep warm. Add 2/3 of 100 g of grated Gruyere to the Thermomix bowl and mix for 1 minute at 60°C, Stufe 2.

Incorporating the cream and egg yolks

Remove the Thermomix bowl from the base. In a separate bowl, beat together 1 small pot of fresh cream and 2 egg yolks. Add this mixture to the Thermomix bowl and mix gently.

Gratinating in the oven

Preheat the oven grill. Put the pieces of poultry in an oven dish. Coat with the prepared cheese sauce. Sprinkle with the remaining grated Gruyere (1/3 of 100 g). Bake in the oven until the cheese is golden brown.

Serve

Serve the poultry gratinated with Gruyere immediately.
