Description

This poultry dish with lemon and mushrooms is a real delight, inspired by Asian flavours. I often prepare it for festive meals or Sunday brunches. The poultry, tender and fragrant, is enhanced by the freshness of the lemon and the umami taste of the mushrooms. The sauce, slightly sweet and salty, brings a touch of exoticism that pleases everyone. The preparation takes a little time, but the result is really worth it. This dish can be accompanied by basmati rice or Chinese noodles. A real treat for the taste buds!

Ingredients (13 ingredients)

  • 1.8 kg Chicken
  • 2 piece Lemon(s)
  • 15 g Lard
  • 1 morceau Fresh ginger
  • 1 piece Red bell pepper(s)
  • 6 piece Scented mushroom(s)
  • 5 piece Spring onion(s)
  • 4 c. à soupe Yellow wine
  • Sugar
  • Soy sauce
  • Cornstarch
  • 5 c. à soupe Oil
  • 1.5 c. à café Fine salt

Preparation (13 steps)

Preparation of mushrooms

Soak the scented mushrooms in lukewarm water for 20 minutes. Drain them and cut them into quarters. Set aside.

Preparation of ginger and pepper

Cut the fresh ginger into slices. Seed the red pepper and cut it into strips. Set aside.

Preparation of lemon and onions

Cut a lemon into very thin slices. Squeeze the juice from the second lemon. Cut the spring onions into small cubes. Set aside.

Preparation of the Cornstarch

Dilute 2 tablespoons of Cornstarch in 2 tablespoons of water. Set aside.

Deboning and cutting the poultry

Completely debone the poultry. Cut the flesh into flat strips of 5 x 2 cm. Set aside.

Seasoning the poultry

Mix 1.5 teaspoons of fine salt, pepper and 5 tablespoons of oil in a plate. Roll the pieces of poultry in it. Set aside.

Cooking the poultry in the pan

In a sauté pan, over high heat, heat some oil and sauté the pieces of poultry for 2 to 3 minutes. Keep warm.

Preparation of the sauce

Adding wine, sugar and soy sauce

Add 4 tablespoons of yellow wine, sugar (according to your taste) and 2 tablespoons of soy sauce to the Thermomix bowl. Set 3 Min./100°C/Stufe 2.

Thickening the sauce

Add the diluted Cornstarch to the Thermomix bowl. Set 2 Min./100°C/Stufe 3.

Finalizing the cooking

Put the pieces of poultry back into the Thermomix bowl, then add the lemon juice. Set 5 Min./100°C/Linkslauf Stufe 1.
