Description

This Creamed Salt Cod with Green Sauce is a feast for the senses! I have been making this dish since I was a child and it is always a highlight. The tender, almost creamy salt cod harmonizes perfectly with the fresh, spicy Green Sauce. The preparation is a bit more complex, but the result is worth every effort. Perfect as an appetizer or light main course, especially in spring and summer. A touch of Italy for every occasion! If you like, you can also serve some boiled potatoes with it.

Ingredients (13 ingredients)

  • Desalted salt cod
  • Extra virgin olive oil (EVO)
  • to taste Salt
  • to taste Black pepper
  • Parsley
  • Ice cubes
  • Anchovies in oil
  • to taste Mustard
  • Capers
  • Pickled gherkins
  • Extra virgin olive oil (EVO)
  • to taste Salt
  • to taste Black pepper

Preparation (3 steps)

Prepare Green Sauce

Thermomix® Setting
20 sec/Speed 8

Parsley, anchovies in oil, mustard, capers, pickled gherkins, 50 ml extra virgin olive oil, salt and black pepper in the bowl. Blend for 20 Sec./Speed 8. Add more extra virgin olive oil if necessary to reach the desired density.

Prepare salt cod

Cut the desalted salt cod into slices and make incisions on the skin part.

Cook salt cod

In a pan with a drizzle of hot extra virgin olive oil, cook the salt cod for 5 minutes over medium-high heat. Pour hot oil over the surface of the fish, season with salt and pepper. Lower the heat and add a ladle of water, cover and cook for about 5 minutes over medium-low heat until the liquid remains.
