Description

This Baccalà alla Napoletana recipe is a true classic of Neapolitan cuisine! I always enjoy making it because it is so easy to prepare and tastes incredibly delicious. The cod is first turned in flour and fried before being simmered in an aromatic tomato sauce with olives and capers. The combination of the tender fish and the spicy sauce is simply irresistible. Perfect as a main course for a cozy dinner with friends or family. A touch of Italy for every day!

Ingredients (9 ingredients)

  • 600 g Cod fillet already soaked
  • 400 g Peeled tomatoes
  • 50 g Gaeta olives
  • 2 cucchiai Desalted capers
  • 3 cucchiai Extra virgin olive oil (EVO)
  • 1 tsp Dried oregano
  • 1 clove Garlic
  • 100 g Flour 00
  • 200 ml Peanut oil

Preparation (5 steps)

Sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Add 3 tablespoons of extra virgin olive oil (EVO) and sauté for 3 min./120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting
15 min/212°F/Speed 1 Linkslauf 100 Reverse

Put 400g of peeled tomatoes in the mixing bowl and chop for 5 sec./speed 4. Add 1 teaspoon of dried oregano, 2 tablespoons of desalted capers and 50g of Gaeta olives. Cook for 15 min./100°C/speed 1 reverse.

Prepare cod

Put 100g of Flour 00 on a plate. Turn 600g of Cod fillet already soaked in flour.

Fry cod

Heat 200ml of Peanut oil in a pan. Fry the Cod fillet already soaked in portions for about 5-6 minutes until golden brown.

Mix and simmer cod with sauce

10 min/212°F/Gentle stir speed Linkslauf 100 Reverse

Put the fried Cod fillet already soaked in the mixing bowl and cover with the prepared tomato sauce. Simmer for 10 min./100°C/gentle stir setting reverse.
