  • 500 g Flour
  • 380 ml Lukewarm water
  • 10 g Fresh yeast
  • 10 g Salt
  • Seeds
  • 1 EL Sourdough starter

Preparation (8 steps)

Activate yeast

Pour 380 ml of lukewarm water into the mixing bowl. Add 10 to 12 g of fresh yeast and a pinch of honey or sugar and dissolve for 5 minutes / 37°C / speed 2.

Knead dough

Add 500 g of flour and 1 tbsp of sourdough starter and knead for 10 minutes / knead setting.

Add salt

After 9 minutes, add 10 g of salt and a mini splash of water (drop by drop) and knead for another 5 minutes / knead setting.

Dough rest

Place the dough in an oiled dough tub. Fold once from each side. Cover and let rise for 60 minutes in a warm place (next to the heater or in the oven with the light on).

Shape dough

Release the dough and slowly slide it onto a well-floured work surface. Divide the dough into 3 equal pieces. Fold each piece like a baguette (video instructions are available online).

Let the shaped dough rest

Place the shaped dough on a floured baguette tray and let rest and rise again for 20 to 30 minutes (or longer, depending on room temperature).

Preheat oven

Meanwhile, preheat the oven to 250 degrees.

Bake baguettes

Lightly flour and score the shaped dough. Slide into the oven on the 2nd rack from the bottom. Steam generously (with a food-safe spray bottle). After 10 minutes, release the steam and reduce the temperature to 220 degrees. Bake the baguettes for another 15 to 20 minutes. Let cool on a wire rack.
