Description

This baked chicken dish is a family favorite! Tender chicken breasts are coated in a flavorful Parmesan and breadcrumb mixture, then baked over a bed of savory mushrooms. The lemon butter drizzle adds a bright, zesty touch that perfectly complements the earthy mushrooms and rich Parmesan. Ingredients (11 ingredients)

  • 1 piece egg
  • 2 tsp garlic powder, divided
  • salt
  • ground black pepper
  • 1 cup bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup unsalted butter, melted
  • 1 tbsp fresh lemon juice
  • 1 pound sliced fresh mushrooms
  • 8 piece skinless, boneless chicken breasts
  • 1 tsp chopped fresh parsley

Preparation (7 steps)

Preheat oven

Preheat the oven to 375 degrees F (190 degrees C). This step is done outside of the Thermomix.

Prepare egg mixture

Place 1 egg, 1 teaspoon garlic powder, salt, and black pepper to taste in a shallow bowl and whisk until combined. This step is done outside of the Thermomix.

Prepare breadcrumb mixture

In a separate shallow bowl, combine 1 cup bread crumbs, remaining 1 teaspoon garlic powder, and ½ cup grated Parmesan cheese. This step is done outside of the Thermomix.

Melt butter and combine with lemon juice

Place ¼ cup unsalted butter, melted, and 1 tablespoon fresh lemon juice in a bowl and mix. This step is done outside of the Thermomix.

Prepare baking dish

Pour about 2/3 of the melted butter and lemon juice mixture into the bottom of a 9x13-inch baking dish, tilting the dish to completely coat. Spread 1 pound sliced fresh mushrooms in an even layer in the dish. This step is done outside of the Thermomix.

Coat and arrange chicken

Dip 8 skinless, boneless chicken breasts into the egg mixture, lifting up so excess drips back in the bowl. Press into the bread crumb mixture to coat both sides; place on top of the mushrooms in the baking dish. Drizzle remaining butter mixture over chicken breasts; sprinkle with 1 teaspoon chopped fresh parsley. This step is done outside of the Thermomix.

Bake chicken

Bake in the preheated oven until chicken is golden brown and juices run clear, about 45 minutes. This step is done outside of the Thermomix.
