Description

These stuffed chicken ballotines are a festive and tasty dish, perfect for special occasions or an elegant dinner. I have been preparing this recipe for years and it is always a hit with my guests. The chicken, stuffed with fresh vegetables, smoked ham and melting brie, offers an explosion of flavours in the mouth. The preparation takes a little time, but the result is really worth it. Accompanied by green vegetables, these ballotines constitute a complete and balanced meal. Feel free to vary the vegetables according to your tastes and the season. A real treat!

Ingredients (15 ingredients)

  • 2 piece Chicken breast
  • 5 slice Smoked ham
  • 2 piece Green pepper
  • 2 piece Red pepper
  • 2 piece Carrot
  • 0.25 piece Onion
  • 2 piece Mushroom
  • 5 slice Cheddar
  • 5 slice Brie
  • Candied tomato
  • to taste Thyme
  • to taste Parsley
  • to taste Chervil
  • to taste Salt
  • to taste Pepper

Vegetable preparation

Cut the quarter of onion into pieces. Put the onion, the 2 seeded green peppers, the 2 seeded red peppers and the 2 peeled carrots in the Thermomix bowl. Chop 5 Sec./Speed 5.

Adding the mushrooms

Thermomix® Setting
3 sec/Speed 4

Add the mushrooms (except for a large mushroom reserved for assembly) to the mixture in the Thermomix bowl. Chop 3 Sec./Speed 4. Transfer the mixture to a sieve and drain well. Reserve the liquid.

Seasoning the vegetable mixture

Add the thyme, parsley, chervil, salt and pepper to the drained vegetable mixture. Mix 10 Sec./Reverse rotation Speed 2.

Preparing the chicken breasts

Preheat the oven to 180°C. Prepare the chicken breasts as indicated in the original recipe (wash, drain, remove the fat, slice on the thickness and open).

Assembling the ballotines

Follow the instructions in the original recipe for assembling the ballotines (ham, cheddar, vegetable mixture, mushrooms, brie, ham). Tie with string if possible.

Baking

Lightly oil an oven dish. Place the ballotines in the dish. Coat with the reserved vegetable liquid and a few candied tomatoes. Bake in the preheated oven for 45 to 55 minutes.

Cheese topping

After about 30 minutes of cooking, collect the melted cheese in the cooking juices and coat the ballotines with it. Resume cooking until the cheese is nicely browned.

Rest and service

Let rest covered for a few minutes before serving. Serve with green vegetables.
