Description

This banana bread is an absolute hit when you need something quick and have ripe bananas left over! I often bake it on the weekend for a cozy breakfast or as a healthy snack in between. The apple and bananas make the bread nice and juicy, and the walnuts provide a great bite. It is super easy to prepare and tastes delicious both warm and cold. If you like, you can add some cinnamon or refine the bread with chocolate chips. A great recipe for the whole family!

Ingredients (7 ingredients)

  • 300 g Banana(s), very ripe
  • 200 g Whole wheat flour
  • 1 n. B. Cinnamon powder
  • 100 g Apple, grated
  • 0.5 Pck. Baking powder
  • 2 piece Egg(s)
  • 50 g Walnuts, chopped

Preparation (6 steps)

Grate apple and prepare bananas

Peel, core and chop 100 g apple into pieces in the mixing bowl. Chop for 5 sec./speed 5. Peel 300 g very ripe bananas and add to the apple in the mixing bowl.

Puree bananas and apple

Thermomix® Setting
10 sec/Speed 6

Puree the bananas and apple for 10 sec./speed 6. Scrape everything down from the edge with the spatula.

Add eggs and stir

Thermomix® Setting
20 sec/Speed 4

Add 2 eggs and stir for 20 sec./speed 4.

Mix and add dry ingredients

Thermomix® Setting
20 sec/Speed 4

Add 200 g whole wheat flour, 0.5 pack baking powder and approx. 1 tsp cinnamon powder and stir for 20 sec./speed 4.

Fold in walnuts

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add 50 g chopped walnuts and fold in for 10 sec./reverse rotation speed 2.

Baking

Pour the dough into a greased loaf pan and bake in a preheated oven at 180 °C top/bottom heat for approx. 45 minutes. Do a stick test.
