Description

This banana chocolate cake with raspberry freshness is an absolute eye-catcher on any coffee table! The combination of juicy banana cake, creamy chocolate filling and fresh raspberries is simply irresistible. I particularly like to make this cake when I am expecting guests, as it can be prepared well in advance and is always well received. Although the preparation is a little more complex, the result is well worth it. A tip: Use ripe bananas for the cake, so it becomes particularly aromatic. The cake is perfect for birthdays or other festive occasions.

Ingredients (12 ingredients)

  • 4 piece Egg(s)
  • 4 tbsp Water hot
  • 180 g Sugar
  • 1 Pck. Vanilla sugar
  • 140 g Flour
  • 60 g Cornstarch
  • 0.5 Pck. Baking powder
  • Fat for the mold
  • 160 g Cream cheese
  • 100 g Chocolate variety according to taste
  • 250 g Quark
  • 300 g Raspberries also more as desired

Preparation (16 steps)

Separate eggs

Separate the eggs. The egg white will be needed later for the beaten egg whites.

Beat egg whites

Put the egg white in the mixing bowl and whisk with the butterfly 3 min./level 3.5 until stiff. Transfer and set aside.

Beat egg yolk

Thermomix® Setting

Place the egg yolks and hot water in the mixing bowl and beat for 2 min./level 3.

Add sugar

Add sugar and vanilla sugar to the egg yolk and stir for 1 min./level 3.

Fold in beaten egg whites

Carefully fold the beaten egg whites into the egg yolk-sugar mixture.

Stir in flour mixture

Mix flour, cornstarch and baking powder, sieve if necessary and then stir into the dough for 30 sec./level 2.

Bake dough

Fill the dough into a greased springform pan and bake in a preheated oven at 180 °C convection oven for approx. 35 min. until golden brown.

Melt the chopped chocolate 3 min./50°C/level 2.

Peel the bananas, cut them into pieces, put them in the mixing bowl and puree for 20 sec./level 8.

Mix banana chocolate mixture

Thermomix® Setting

Add the pureed bananas to the melted chocolate and stir for 30 sec./level 3. Let the mixture cool.

Prepare cream

Thermomix® Setting
30 sec/Speed 3

Add cream cheese and quark to the cooled banana chocolate mixture and stir for 30 sec./level 3. Refrigerate the cream.

Halve base

If possible, halve the cooled base in the middle so that there are two bases.

Layer cake

Spread half of the raspberries on the bottom base and spread half of the cream on top. Now layer the second base on top and repeat the process.

Chill

Refrigerate the cake for at least 1 1/2 hours, otherwise wait until serving.

Serve

Cut the cake into about 8 pieces and serve.
