Description

This country chicken with potatoes is a comforting and flavorful dish, perfect for a family meal or a special dinner. The recipe is easy to prepare with the Thermomix®, which greatly facilitates the process. The chicken is tender and juicy, imbued with the Provençal aromas of garlic, parsley and white wine. The potatoes, cooked separately, perfectly complement the dish, providing a crispy texture on the outside and soft on the inside. Ingredients (11 ingredients)

  • 1 piece Chicken
  • 1 tbsp Oil
  • 1 piece Onion
  • 6 clove Garlic
  • 3 tbsp Chopped parsley
  • 0.5 cup Dry white wine
  • 1 cup Vegetable broth
  • 100 gramos Butter
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 kilogramo Potatoes

Preparation (11 steps)

Prepare the chicken

Wash the chicken and cut it into pieces. If you prefer, you can ask the butcher to prepare it.

Brown the chicken in the pan

In a pan, heat the oil over medium-high heat. Brown the chicken pieces on all sides until golden brown. Remove the chicken to a plate with absorbent paper and reserve.

Chop the onion and garlic

Put the onion in quarters and the garlic cloves in the Thermomix glass. Program 3 seconds/speed 5 to finely chop them.

Sauté the onion and garlic

Add the oil to the Thermomix glass with the chopped onion and garlic. Program 3 minutes/120°C/speed 1 to sauté, being careful not to burn them.

Add the parsley

Add the chopped parsley to the glass and program 1 minute/120°C/speed 1 to sauté.

Incorporate the wine and broth

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Add the dry white wine and half of the vegetable broth to the glass. Program 5 minutes/Varoma/speed 1, without the measuring cup, so that the alcohol evaporates.

Cook the chicken

Thermomix® Setting
30 min/212°F/Speed cuchara 100 Reverse

Place the chicken pieces in the Thermomix glass. Program 30 minutes/100°C/spoon speed/reverse direction. Add the rest of the broth little by little during cooking if necessary to prevent it from drying out.

Prepare the potatoes

While the chicken is cooking, wash, peel and cut the potatoes into squares.

Fry the potatoes

Fry the potatoes in abundant hot oil until golden and crispy. Drain excess oil with absorbent paper.

Flavor the potatoes

Place the fried potatoes in a saucepan. Add the butter, chopped parsley, salt and pepper. Stir so that the potatoes are well impregnated with the butter and seasonings.

Serve

Serve a piece of chicken on each plate, bathe with the cooking sauce and accompany with a portion of fried potatoes.
