Description

This Thermomix® recipe for beef filet with savoy cabbage and seed salad is a protein-rich main course with seasonal ingredients such as beef filet, savoy cabbage, walnut and sunflower seeds. The preparation takes a total of 55 minutes, the active working time is about 30 minutes. The recipe is designed for 4 servings and is ideal for a hearty family meal or festive occasions in autumn and winter. The salad perfectly complements the meat and provides a balanced meal.

Ingredients (12 ingredients)

  • 400 g Beef fillets
  • 0.5 Kopf Savoy cabbage
  • Coarse salt
  • Freshly ground pepper
  • 8 EL Refined peanut oil
  • 2 EL Walnuts
  • 2 EL Sunflower seeds
  • 1 TL Honey
  • 3 EL White wine vinegar
  • 2 Zehen Garlic
  • 3 Zweig(e) Rosemary
  • 1 TL Butter

Preparation (8 steps)

Prepare the savoy cabbage

Clean 0.5 head of savoy cabbage, wash, halve and remove the stalk. Cut the leaves into fine strips without the middle ribs. Sprinkle with coarse salt in a salad bowl and knead with your hands. Preheat oven to 140 degrees Celsius top/bottom heat.

Season the beef fillets

Remove 400 g of beef fillets from the refrigerator half an hour before frying. Pat the beef fillets dry and season generously with salt and pepper on all sides.

Sear and cook the beef fillet

Heat 5 tbsp of refined peanut oil in a cast-iron pan on the stove over high heat for about 5 minutes. Place the meat in the center of the pan and sear for 2 minutes without moving it. Turn and sear for another 2 minutes. Remove the pan from the stove. Cook the beef fillets on the rack in the oven for about 12 minutes.

Roast nut and seed mixture

Coarsely chop 2 tbsp of walnuts. Roast walnuts and 2 tbsp of sunflower seeds in a small coated pan without fat for about 5 minutes and add to the savoy cabbage.

Prepare the dressing

Place 3 tbsp refined peanut oil, 1 tsp honey, 3 tbsp white wine vinegar, coarse salt and pepper in the mixing bowl and mix for 10 sec/speed 3.

Add dressing to salad

Pour the dressing from the mixing bowl over the savoy cabbage salad and mix well.

Flavoring the fillets

Put the pan in which the fillets were fried back on the stove and heat gently. Peel 2 cloves of garlic and flatten with the flat of your hand. Add to the pan with 3 sprigs of rosemary and 1 tsp of butter. Place the beef fillets from the oven in the pan and heat for about 1 to 2 minutes, basting the meat with the fat from the pan.

Let the fillet rest

Remove the fillets from the pan and let them rest on a plate for about 5 minutes. Then serve.
