Description

This hearty beef roast from the Thermomix® is a classic main course for the whole family. With beef, onions, carrots and celery, an aromatic roast is prepared in no time at all. The preparation takes a total of 150 minutes, with the active working time being only about 20 minutes. The recipe is ideal for Sunday cuisine or festive occasions and is sufficient for 6 servings.

  • 1 kg Beef roast
  • 2 tbsp Oil
  • 2 Zwiebel Onions
  • 2 Karotte Carrots
  • 100 g Celery
  • 1 tbsp Mustard
  • 1 tsp Peppercorns
  • 2 piece Bay leaves
  • 1 Zweig Rosemary
  • 1 Zweig Thyme
  • 250 ml Red wine, dry
  • 500 ml Broth
  • 200 ml Cream
  • Salt
  • Pepper

Preparation (10 steps)

Prepare vegetables

Peel and quarter the onions. Clean and roughly chop the celery and carrots.

Chop onions

Put the onions in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and chop vegetables

Add celery and carrots to the onions in the mixing bowl and chop for 5 sec./level 5.

Sear meat

Sear the meat in a separate pan from all sides.

Add meat and remaining ingredients

Add the seared meat, mustard, peppercorns, bay leaves, rosemary and thyme to the vegetables in the mixing bowl. Top up with red wine and broth.

Stew beef roast

Stew the beef roast for 90 min./100°C/level 1/reverse. Leave the measuring cup on.

Prepare sauce

Remove the meat from the mixing bowl and keep warm. Remove bay leaves. Puree the sauce for 30 sec./level 8-10, gradually increasing the speed.

Add cream to the mixing bowl and stir for 3 min./90°C/level 2.
