Description

Beef slices with paprika is a comforting and flavorful dish, perfect for autumn or winter evenings. I often prepare it for a quick weeknight dinner because it is both simple and delicious. The beef, cut into thin slices, is seared in a pan and then coated with a creamy sauce with paprika and cognac. The sweet paprika adds a warm and slightly smoky touch, while the cognac enhances the flavors of the meat. This dish is ideal to accompany fresh pasta, rice or potatoes.   • 500 g of beef (for fondue)
  • 300 ml of water
  • 50 ml of cognac
  • 2 c. à c. of paprika
  • 1 c. à s. of oil
  • 1 piece onion
  • 8 c. à c. of veal stock
  • 2 c. à s. of thick fresh cream

Peel an onion and cut it into four. Put the onion in the Thermomix bowl and chop for 3 Sek./Stufe 5.

Preparation of the veal stock

Dilute 8 tsp of veal stock in 300 ml of hot water. Set aside.

Cooking of the meat

Cut 500 g of beef (for fondue) into strips. In a pan, heat the oil and quickly sauté the strips of meat. Set aside.

Preparation of the sauce

Sprinkle the cooked onion in the Thermomix with 2 tsp of paprika, add 50 ml of cognac, the water with the veal stock and 2 tbsp of thick fresh cream. Reduce for 7 Min./100°C/Stufe 2.

Although I cannot claim historical authenticity, I am inspired by these culinary traditions to create a family and comforting dish. My grandmother, of Alsatian origin, often prepared rich and fragrant dishes in sauce, and this slice reminds me a little of those flavors of yesteryear. The choice of ingredients is crucial for the success of this dish. The beef, ideally fondue meat, must be cut into thin slices for quick cooking and optimal tenderness. Sweet paprika, a true pillar of the recipe, brings a warm, slightly smoky and sweet flavor. It is important to use a good quality paprika for an optimal taste result. The onion, chopped finely, serves as an aromatic base for the sauce. The veal stock, diluted in water, brings depth and richness to the sauce. The cognac, meanwhile, deglazes the pan and enhances the flavors of the meat, while adding a touch of elegance. Finally, the thick fresh cream brings smoothness and sweetness to the sauce, creating a velvety texture. The use of the Thermomix® greatly simplifies the preparation of this dish. The chopping of the onion is quick and uniform, and the cooking of the sauce is perfectly controlled thanks to the precise control of the temperature and speed. For a thicker sauce, the reduction time can be extended by a few minutes. It is important not to overcook the meat, as it may become tough. A brief passage in the pan is enough to seize it and color it lightly. When finalizing the dish, the "reverse" mode of the Thermomix® allows you to gently reheat the meat without undoing it.
