Description

Diese Zitronen-Cranberry Schnitten sind ein absoluter Genuss! Ich mache sie besonders gerne, wenn ich Besuch erwarte, denn sie sind schnell zubereitet und schmecken einfach jedem. Die Kombination aus der säuerlichen Zitrone und den süßen Cranberries ist unschlagbar. Durch die Zugabe von Mandelextrakt bekommen die Schnitten noch eine besondere Note. Sie sind perfekt für den Nachmittag zum Kaffee oder als süßer Snack zwischendurch. Die Zubereitung ist super einfach und gelingt garantiert. Ein tolles Rezept, das man immer wieder gerne macht!

Ingredients (13 ingredients)

  • nonstick cooking spray
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, melted
  • 2 large eggs, beaten
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon, zested
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon vanilla extract
  • 0.75 cups sweetened dried cranberries, divided
  • 0.5 cup white chocolate chips

Preparation (6 steps)

Backofen vorheizen und Backform vorbereiten

Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and spray with nonstick cooking spray. This step is done outside of the Thermomix.

Trockene Zutaten mischen

Add 2 cups all-purpose flour, 1 cup white sugar, 2 teaspoons baking powder, and ½ teaspoon salt to the mixing bowl. Mix for 10 Sec./Stufe 4.

Flüssige Zutaten hinzufügen und vermischen

20 sec/Speed 3

Add 1 cup melted unsalted butter, 2 large beaten eggs, 2 tablespoons freshly squeezed lemon juice, 1 tablespoon lemon zest, ½ teaspoon almond extract, and ½ teaspoon vanilla extract to the mixing bowl. Mix for 20 Sec./Stufe 3.

Cranberries und Schokostückchen unterrühren

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add ½ cup sweetened dried cranberries and ½ cup white chocolate chips to the mixing bowl. Mix for 10 Sec./Linkslauf Stufe 2.

Teig in die Backform geben und backen

Spread batter into the prepared baking dish. Sprinkle remaining 1/4 cup of cranberries evenly over the top. Bake in the preheated oven until the edges are golden and the center is set, 20 to 25 minutes. This step is done outside of the Thermomix.

Abkühlen lassen und servieren

Remove blondies from the oven to cool on a wire rack completely before slicing and serving. This step is done outside of the Thermomix.
