Description

These shortbread cookies with jam are a delicious treat for the Christmas season. The dough is prepared in the Thermomix® and the cookies are filled with jam, dipped in chocolate glaze and sprinkled with hazelnut brittle. The preparation takes about 2 hours and yields about 45 cookies.

Ingredients (10 ingredients)

  • 250 g Butter (softened)
  • 100 g Icing sugar
  • 1 Prise Salt
  • 1 Stück Egg
  • 100 g Bittersweet chocolate couverture
  • 300 g Flour
  • Apricot or raspberry jam
  • 1 EL Rum
  • Chocolate glaze for dipping
  • Hazelnut brittle

Preparation (5 steps)

Mix butter, icing sugar and salt

Place 250 g of soft butter, 100 g of icing sugar and 1 pinch of salt in the mixing bowl and mix for 2 min./speed 3.

Add egg and couverture

Add 1 egg and 100 g of bittersweet chocolate couverture in pieces to the mixing bowl and mix for 30 sec./speed 4.

Knead in flour

Thermomix® Setting

Add 300 g flour to the mixing bowl and knead for 2 min./kneading setting to form a dough.

Process and bake dough

Roll out the dough on a floured work surface and cut out cookies. Place the cookies on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for about 10-12 minutes.

Fill and decorate cookies

After cooling, spread half of the cookies with apricot or raspberry jam mixed with 1-2 tbsp of rum and cover with a second cookie. Dip the cookies halfway in chocolate glaze and sprinkle with hazelnut brittle.
