Description

These oatmeal cookies are an absolute classic and super easy to prepare! I have been making them since childhood and they always taste great. The combination of oatmeal, hazelnuts and cinnamon makes them particularly tasty and crispy. Perfect for a cozy afternoon with coffee or tea. They are not too sweet and are also good as a small snack in between. The recipe is quick and the cookies are baked in no time. Ideal if visitors announce themselves spontaneously! If you like, you can add raisins or chocolate chips.

Ingredients (9 ingredients)

  • 120 g Butter (room temperature)
  • 120 g Sugar
  • 1 piece Egg (room temperature)
  • 1 pinch Salt
  • 90 g Oatmeal
  • 80 g Ground hazelnuts
  • 80 g Wheat flour (Type 405)
  • 1 tsp Baking powder
  • 1 pinch Cinnamon

Preparation (5 steps)

Mix butter and sugar

Put 120 g butter (room temperature) and 120 g sugar into the mixing bowl and mix for 2 min./speed 3.

Add egg

Add 1 egg (room temperature) and 1 pinch of salt and mix for 30 sec./speed 3.

Mix and add dry ingredients

Add 90 g oatmeal, 80 g ground hazelnuts, 80 g wheat flour (Type 405), 1 tsp baking powder and 1 pinch of cinnamon to the mixing bowl and mix for 30 sec./speed 4. If necessary, scrape down the sides with the spatula and mix again for 10 sec./speed 4.

Shape dough and bake

Preheat the oven to 180 degrees top and bottom heat. Line baking sheets with baking paper. Form the dough into walnut-sized balls with your hands and place on the prepared sheets with ample space between them. Bake the cookies on the middle rack for about 12 to 15 minutes until the edges brown visibly.

Let cookies cool

Carefully slide the still soft cookies from the baking sheet onto a wire rack and let them cool.
