About this recipe

These Spiced Molasses Drop Cookies have been a staple in my family for years, especially around the holidays. My grandmother, a fantastic baker, used to make them every Christmas, and the aroma of molasses and spices baking in the oven is a scent that instantly transports me back to those cozy childhood memories. I've adapted her recipe over time, incorporating the convenience of the Thermomix® to streamline the process, but the heart of the recipe remains the same. The success of these cookies hinges on the interplay of the ingredients. The vegetable oil contributes to a soft, almost cake-like texture, while the white sugar provides sweetness and helps create those beautiful crackled tops. The egg acts as a binder, holding everything together. But the real star of the show is the molasses. It lends a deep, rich, slightly bitter flavor that balances the sweetness of the sugar and adds a distinctive chewiness to the cookies. The spices – cinnamon, ginger, and cloves – create a warm, comforting flavor profile that's perfect for cooler weather. Each spice plays a crucial role: cinnamon provides warmth, ginger adds a subtle zing, and cloves contribute a touch of earthy complexity. Using the Thermomix® makes the process incredibly easy. When combining the oil and sugar, ensure the sugar is well incorporated for a smooth base. When adding the dry ingredients, be careful not to overmix. Overmixing can develop the gluten in the flour, resulting in tough cookies. The Thermomix® is powerful, so 30 seconds on speed 5 is usually sufficient. If the dough seems too soft after mixing, gradually add more flour, a tablespoon at a time, until it forms a firm, but not dry, dough. The dough should be easy to handle and roll into balls. Don't skip the step of rolling the cookies in sugar before baking. This creates a delightful sweetness and contributes to the characteristic crackled appearance. For variations, you could easily adapt this recipe to be vegetarian. For a vegan version, you could try using applesauce or a flax egg as an egg replacement, though this might slightly alter the texture. Experiment with different spices! A pinch of nutmeg or allspice would also be delicious. You could also add chopped nuts, like pecans or walnuts, for extra texture and flavor. These cookies are wonderful on their own, but they also pair well with a variety of beverages. A warm cup of coffee or tea is a classic choice. They're also delicious with a glass of cold milk or even a scoop of vanilla ice cream. For a festive touch, serve them with a dollop of whipped cream and a sprinkle of cinnamon. To store the cookies, keep them in an airtight container at room temperature. They will stay fresh for up to a week. You can also freeze the dough balls before baking. Simply place the sugared balls on a baking sheet and freeze until solid. Then, transfer them to a freezer bag. When you're ready to bake, simply bake them from frozen, adding a few extra minutes to the baking time. This is a great way to have freshly baked cookies on hand whenever you want them!
