Description

This Thermomix® recipe for shortcrust pastry cookies uses flour, icing sugar, vanilla sugar, egg and margarine. Preparation with the Thermomix® takes about 35 minutes and yields approximately 20 cookies. Ideal as a Christmas finger food or dessert. Suitable for simple baking projects in the winter season.

  • 300 g Flour
  • 1 Pck. Vanilla sugar
  • 100 g Icing sugar
  • 1 piece Egg (size M)
  • 200 g Margarine
  • Cookie cutter
  • 1 tbsp Lemon juice
  • Icing sugar
  • Food coloring

Mix dry ingredients

Add 300 g flour, 1 packet vanilla sugar and 100 g icing sugar to the mixing bowl and mix for 15 sec/speed 4.

Prepare dough

2 min/Kneading speed

Separate 1 egg (size M). Add only the egg yolk, the flour-sugar mixture from the mixing bowl and 200 g margarine in small pieces to the mixing bowl and knead for 2 min/kneading level to a smooth dough.

Process dough

Remove the dough from the mixing bowl, roll out thinly to 3-4 mm on a floured work surface and cut out cookies with cookie cutters. Place the cut-out cookies on a baking sheet lined with baking paper.

Bake cookies

Place the baking sheet with the cookies in the preheated oven and bake for about 10-15 minutes at 180 °C (convection: 160 °C) until golden brown.

Prepare icing

20 sec/Speed 3

For the icing, add 1-2 tbsp lemon juice and as much icing sugar to the mixing bowl until a creamy mixture is formed. Stir for 20 sec/speed 3. If necessary, add food coloring and stir for another 5 sec/speed 3.

Decorate cookies

Fill the icing into a piping bag or put it on the cooled cookies with a spoon and decorate as desired.
