Description

This ring cake with fresh plums is a soft and fragrant dessert, perfect for breakfast or a snack. The recipe is simple and quick to prepare with the Thermomix®, and the result is a moist and delicious ring cake, enriched by the sweetness of the plums. I often prepare it in autumn, when the plums are at their best, but it can be enjoyed all year round. The chopped almonds in the dough give a crunchy note and an extra flavor.   • 150 g sugar
  • 100 ml milk
  • 150 ml seed oil

Incorporate the chopped plums

Wash, dry and cut 300 g of plums into small pieces. Add the chopped plums to the bowl and gently mix with the spatula to distribute evenly.

Pour into the mold and decorate

Butter and flour a 24 cm ring cake mold. Pour the dough into the mold. Cut the remaining plums into wedges and arrange them on the surface of the cake. Sprinkle with brown sugar.

Baking in the oven

Bake in a preheated oven at 170°C (ventilated) or 190°C (static) for 45 minutes. Do the toothpick test.

She, with floured hands and a sweet smile, prepared this fragrant ring cake, using the plums from her tree in the garden. It was a ritual, a moment of sharing and of scents that filled the house. This recipe is a tribute to her and to those precious memories. The plums are the undisputed stars of this dessert. Their sweet and sour flavor, which intensifies with cooking, goes perfectly with the softness of the dough. I use ripe but firm plums, preferably varieties such as Stanley or President, which maintain their shape well during cooking. Sugar, in this case, is not just a sweetener, but also helps to create a golden and crunchy crust on the surface of the ring cake. Milk and seed oil, on the other hand, give the dough the right moisture and softness, making it pleasantly soft on the palate. Finally, the chopped almonds add a crunchy note and a slightly toasted flavor that contrasts pleasantly with the sweetness of the plums. When I prepare this ring cake with the Thermomix®, I try to pay attention to some details. For example, it is important not to work the dough too much after adding the flour, to prevent it from becoming too tough. I use the spatula to gently incorporate the chopped plums, so as not to break them and to distribute them evenly in the dough. A trick for an even softer ring cake is to sift the flour before adding it to the bowl. And for a perfect browning, I brush the surface of the ring cake with a little milk before baking it.
