Description

These black cabbage and cannellini bean burgers are a tasty and nutritious vegetarian alternative to classic meat burgers. Black cabbage, rich in vitamins and antioxidants, goes perfectly with the creaminess of cannellini beans. Preparing them is really simple and fast, especially with the help of our trusted Thermomix®! Perfect for a light but satisfying dinner, or as a delicious appetizer. An original idea to get even the little ones to eat vegetables, and an excellent option for those following a vegetarian or vegan diet. Try them, they will win you over!

Ingredients (7 ingredients)

  • Black cabbage
  • Cannellini beans
  • 1 clove Garlic
  • Breadcrumbs
  • Extra virgin olive oil
  • Salt
  • Black pepper

Preparation (9 steps)

Prepare black cabbage

Wash the black cabbage thoroughly, dry it and remove the central rib. Cut the leaves into coarse pieces and put them in the Thermomix bowl.

Cook black cabbage

Add salted water to the bowl until it covers the black cabbage. Cook for 15 Min./100°C/Stufe 1.

Sauté garlic

Drain the black cabbage well and set aside. Put a clove of garlic and 2 tablespoons of extra virgin olive oil in the bowl. Sauté for 3 Min./120°C/Stufe 1.

Season and sauté black cabbage

Add the drained black cabbage to the bowl, salt and black pepper to taste. Cook for 10 Min./100°C/Stufe 1, without the measuring cup, to evaporate the water from the vegetables.

Prepare beans

In a bowl, mash the boiled and drained cannellini beans with a fork. Add salt, pepper and a drizzle of extra virgin olive oil. It is not necessary to completely reduce them to a puree.

Chop black cabbage

Remove the garlic from the black cabbage and put it in the bowl. Chop coarsely for 3 Sek./Stufe 4.

Prepare burger mixture

Pour the chopped black cabbage into a bowl with the mashed cannellini beans. Add enough breadcrumbs to firm up the mixture.

Form burgers

With wet hands, form the burgers to the desired size.

Fry burgers

Cook the black cabbage burgers in a pan with a drizzle of oil for 4 minutes per side.
