Description

These blueberry muffins with yogurt from the Thermomix® are an ideal breakfast, dessert or finger food. The main ingredients are blueberries, yogurt, eggs and flour. Ingredients (8 ingredients)

  • 2 piece Eggs, size M
  • 300 g Blueberries - fresh or frozen
  • 300 g Flour, type 405
  • 200 g Whole milk yogurt - 3.5; 3.8% or 10% fat
  • 150 g Sugar
  • 100 ml Vegetable oil, neutral
  • 3 tsp Baking powder
  • 1 packet Bourbon vanilla sugar

Preparation (8 steps)

Preheat oven and prepare muffin cases

Preheat the oven to 180 °C top/bottom heat (convection 160 °C). Prepare a muffin tin with 12 wells and line with 12 muffin paper cases. Wash and drain the 300 g blueberries. This step is done without the Thermomix.

Mix dry ingredients

10 sec/Speed 4

Put 300 g flour, 150 g sugar, 3 tsp baking powder (11g) and 1 packet Bourbon vanilla sugar into the mixing bowl and mix for 10 sec/speed 4.

Transfer dry ingredients

Pour the dry ingredients from the mixing bowl into a separate bowl. The mixing bowl is needed for the wet ingredients.

Mix wet ingredients

Thermomix® Setting
20 sec/Speed 3

Put 2 eggs, 100 ml vegetable oil and 200 g yogurt into the mixing bowl and stir for 20 sec/speed 3.

Mix dry and wet ingredients

30 sec/Speed 3

Add the dry ingredients to the wet ingredients in the mixing bowl and stir for 30 sec/speed 3. Be careful not to overmix the dough.

Fold in blueberries

Carefully fold the 300 g blueberries into the dough in the mixing bowl using a spatula. Perform this step without the Thermomix to avoid damaging the berries.

Fill dough into muffin cases

Immediately distribute the dough into the 12 muffin paper cases using an ice cream scoop (or two tablespoons). This step is done without the Thermomix.

Bake muffins

Bake the muffins for 25-30 minutes on the middle rack in the preheated oven. At the end, use a wooden skewer to check whether the dough is cooked through. This step is done without the Thermomix.
