Description

These buttermilk pancakes are a real treat! They are incredibly fluffy and light, perfect for a relaxed Sunday breakfast or a cozy brunch. The fresh blueberry sauce, with a hint of bitter almond flavor, wonderfully rounds off the taste experience. I especially like to make them in the summer when there are many fresh blueberries. The recipe is simple and can be made in no time with the Thermomix®. An absolute favorite recipe that is always well received by young and old!

Ingredients (14 ingredients)

  • 3 tbsp Butter
  • 400 ml Buttermilk
  • 2 piece Egg(s)
  • 250 g Flour
  • 1 Prise(n) Salt
  • 3 tsp Baking powder
  • 50 g Sugar
  • 1 Pck. Vanilla sugar
  • 200 g Blueberries, frozen or fresh
  • 25 ml Water
  • 2 tsp Cornstarchlightly heaped
  • 50 g Sugar
  • 5 Tropfen Bitter almond flavor
  • Powdered sugarto sprinkle

Preparation (7 steps)

Mix buttermilk and eggs

Thermomix® Setting
10 sec/Speed 3

Add buttermilk and eggs to the mixing bowl and mix for 10 sec/speed 3.

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Add butter to the mixing bowl and melt for 3 min/50°C/speed 2.

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Add flour, salt, baking powder, sugar and vanilla sugar to the mixing bowl and mix for 10 sec/speed 4.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add the buttermilk-egg mixture and the melted butter to the flour mixture in the mixing bowl and mix for 20 sec/speed 4. Let the dough rest in the bowl until the pan is hot (approx. 10 minutes).

Bake pancakes

Add 1.5 - 2 tablespoons of dough per pancake to the greased pan. When bubbles form on the surface, turn the pancake and bake until golden brown on the other side as well. (This step is done in the pan, so no Thermomix setting)

Prepare blueberry sauce

Thermomix® Setting
15 min/212°F/Speed 1 100 Reverse

Add blueberries, water, sugar, bitter almond flavor and starch to the mixing bowl and cook for 15 min/100°C/speed 1/reverse. Crush the blueberries a little with the round side of a tablespoon.

Serve pancakes

Layer 3 - 4 pancakes on the plates and drizzle with a little warm blueberry sauce. I also like to serve the pancakes sprinkled with a little powdered sugar. (This step is done outside of the Thermomix, so no setting)
