Description

This cauliflower-bacon-gratin is a hearty main course that is prepared in about 60 minutes and is sufficient for 6 servings. The casserole combines cauliflower, bacon and cheese to a hearty pleasure. Ideal for a filling lunch or dinner.

Ingredients (10 ingredients)

  • 1 kg Cauliflower
  • 250 g Onions
  • 250 g Grated cheese (Gouda)
  • 200 g Diced bacon
  • 40 g Butter
  • 40 g Flour
  • 500 ml Milk
  • Salt
  • Pepper
  • Nutmeg

Preparation (11 steps)

Chop onions

Put 250g onions into the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add 40g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add flour

Add 40g flour to the onions in the mixing bowl and sweat for 1 min./100°C/level 1.

Deglaze with milk

Thermomix® Setting

Add 500ml milk to the mixing bowl and cook for 5 min./90°C/level 2. Leave the measuring cup on.

Add cheese

Add 150g grated cheese (Gouda) to the mixing bowl and stir in for 2 min./60°C/level 2.

Season

Season with salt, pepper and nutmeg and stir for 10 sec./level 3.

Prepare cauliflower

Clean the cauliflower and divide into florets. Place the WunderSlicer V2 on the mixing bowl lid and insert the fine slice. Pass the cauliflower florets through the WunderSlicer V2 and collect the cut material in a bowl.

Fry bacon

Fry 200g diced bacon in a separate pan until crispy.

Mix cauliflower and bacon

Put the sliced cauliflower and the fried diced bacon in a casserole dish and mix.

Add sauce

Pour the sauce from the mixing bowl over the cauliflower and bacon in the casserole dish.

Gratinate

Sprinkle the remaining grated cheese (50g) over the casserole and bake in a preheated oven at 200°C top/bottom heat for about 30 minutes until golden brown.
