Description

These fried chicken bites are an explosion of flavor and crispiness! Perfect as a tasty appetizer or as a quick and tasty second course, they will appeal to young and old alike. Marinating in lemon makes the chicken tender and juicy, while the light and crispy batter wraps it in a golden embrace. I often prepare them for my children's birthday parties, they always disappear in a flash! Preparation is simple and quick, ideal when you have little time available. A tip? Serve them hot with a squeeze of fresh lemon and a sauce of your choice. They are irresistible!

Ingredients (10 ingredients)

  • 500 g Chicken breast
  • 250 g Flour
  • 1 piece Eggs
  • 2 tbsp Extra virgin olive oil
  • 10 g Brewer's yeast
  • 150 ml Water
  • 1 piece Lemon
  • 500 ml Seed oil for frying
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation of the chicken

Cut the chicken breast into medium-sized chunks. Transfer the chunks to a bowl and season with salt and plenty of black pepper. Mix well to ensure all pieces are seasoned evenly.

Preparation of the batter

In the Thermomix bowl, pour 250g of flour, 10g of crumbled brewer's yeast and 150ml of water. Set 2 Min./Knetstufe to mix the ingredients. Add 2 tablespoons of extra virgin olive oil and 1 beaten egg. Set again 1 Min./Knetstufe to obtain a smooth and homogeneous batter.

Resting the batter

Transfer the batter to a bowl, cover with plastic wrap and let it rest in a warm place for about 2 hours. This will allow the batter to rise and become lighter.

Frying the chicken

In a large pan, heat plenty of seed oil for frying. Dip the chicken pieces in the batter, making sure they are well covered. When the oil is hot, fry the chicken pieces a few at a time, to avoid lowering the oil temperature too much.

Browning and serving

Let the chicken pieces brown on one side, then turn them over to the other. When they are puffed up and golden brown, remove them with a slotted spoon and place them on absorbent paper to remove excess oil. Sprinkle a few drops of lemon on the nuggets before serving them hot.
