Description

This hearty soy-vegetable bolognese is an absolute must for anyone looking for a delicious and vegan alternative to classic bolognese. I often make it when I need something quick, but still want something hearty on the table. The soy chunks make the sauce nice and filling and the vegetables provide a great seasoning. I especially like the combination with fresh herbs. A dash of soy cream rounds off the dish perfectly. Ideal for a cozy evening with friends or family!

Ingredients (10 ingredients)

  • 0.2 piece Celeriac
  • 2 piece Carrot(s)
  • 2 piece Onion(s)
  • 150 g Olive oil
  • 500 g Tomatoes, sieved
  • 0.5 Tube/n Tomato paste
  • Salt
  • Pepper
  • Paprika powder, mild
  • 500 g Curry powder

Preparation (6 steps)

Prepare vegetables

Peel the celeriac, carrots and onions and cut into coarse pieces. Place the soy chunks in a bowl and pour boiling hot water over them according to the package instructions, stir and set aside.

Chop vegetables

Put celeriac, carrots and onions in the mixing bowl and chop for 5 sec./level 5. If necessary, use the spatula to push down from the edge.

Sauté vegetables

Add olive oil to the mixing bowl and add the chopped vegetables. Sauté for 5 min./120°C/level 1.

Add soy chunks

Drain the soy chunks and add to the mixing bowl. Sauté for 5 min./Varoma/level 1 without a measuring cup so that the liquid can evaporate.

Add tomato paste and sieved tomatoes to the mixing bowl and simmer for 20 min./100°C/level 1 reverse.

This soy-vegetable bolognese has become a real staple in our home. It all started with the desire to eat less meat without having to forego a hearty, filling dish. I still remember the first attempts, where the sauce was either too watery or too bland. But with time and some experimentation, this recipe has emerged, which is now loved by the whole family. The basis of this bolognese is, of course, the soy chunks. They are a great source of protein and give the sauce the necessary substance. It is important to let them soak well before preparation so that they become nice and soft. The vegetables – celeriac, carrots and onions – provide the aromatic base. The celeriac brings a slightly earthy note, the carrots a pleasant sweetness and the onions a certain spiciness. The olive oil not only serves as a flavour carrier, but also helps to gently sauté the vegetables and release their aromas. The sieved tomatoes form the fruity foundation of the sauce, while the tomato paste provides an intense tomato note and a nice binding. The spices – salt, pepper, paprika powder and curry powder – give the bolognese its characteristic taste. The curry powder may seem unusual at first, but it gives the sauce a special depth and warmth. When preparing in the Thermomix®, it is important not to chop the vegetables too finely, otherwise they will turn into mush. Level 5 is ideal here. When sautéing the soy chunks without a measuring cup, the excess liquid can evaporate well, which makes for a smoother sauce. The reverse is crucial so that the soy chunks are not chopped. If you like it even creamier, you can add a dash of soy cream or oat cream at the end. For a vegetarian version, you can also use lentils or chopped mushrooms instead of soy chunks. There are no limits to the imagination when it comes to the spices. Oregano, thyme or rosemary go perfectly with this bolognese. The soy-vegetable bolognese is traditionally served with spaghetti or other types of pasta. But it also tastes great with polenta or mashed potatoes. A fresh salad and a piece of bread round off the dish. If you like, you can also use the bolognese as a filling for lasagna or cannelloni. The soy-vegetable bolognese can be prepared well in advance and stored in the refrigerator. It will keep there for 2-3 days without any problems. You can also freeze it in portions and thaw it again if required. So you always have a delicious and healthy meal at hand.
