Description

These ricotta and rocket lasagne pockets are a delightful twist on a classic Italian dish. I've been making this recipe for years, and it's always a hit! The creamy ricotta filling combined with the peppery rocket creates a wonderful flavor contrast. It's surprisingly easy to prepare, making it perfect for a weeknight meal or a casual weekend brunch. The baking time is minimal, so you can have a delicious and satisfying meal on the table in no time. Feel free to add a sprinkle of chili flakes for a touch of heat. Enjoy!

  • Ricotta
  • Rocket leaves
  • Sauce
  • Cheese

Preparation (3 steps)

Soften Lasagne Sheets

Place the lasagne sheets in a large bowl and pour boiling water over them to cover. Let them soak for 5 minutes. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6 and lightly oil a shallow baking tray. This step is done outside the Thermomix to soften the lasagne sheets for easier handling.

Prepare Ricotta Filling

Drain the lasagne sheets in a colander. This step is done outside the Thermomix. Take one sheet and put a large spoonful of ricotta in the centre. Scatter over a few rocket leaves, season well, then fold the sheet in half. Press the edges together to form a pocket. Continue to fill all the pasta sheets, then lay them on the baking tray so they overlap slightly. This step is done outside the Thermomix.

Heat Sauce

Tip the sauce over the pasta pockets, spreading to make sure they are completely covered. Sprinkle over the cheese. Place the baking tray in the preheated oven and bake for 10-12 minutes until hot and bubbly. This step is done outside the Thermomix.
