Description

This Thermomix® peanut butter walnut confection is a delicious snack or festive dessert with walnuts, peanut butter, butter cookies and dark chocolate. Preparation takes about 60 minutes of work and a total of 210 minutes including cooling time, yields about 30 servings. Ideal as Christmas confectionery, with coffee or as a sweet treat for special occasions. The recipe is perfect for anyone who wants to prepare a simple and quick confection with the Thermomix®.

Ingredients (8 ingredients)

  • 75 g Walnuts
  • 75 g Butter cookies
  • 150 g Butter
  • 175 g Peanut butter
  • 200 g Powdered sugar
  • 250 g Dark chocolate
  • 25 g Coconut oil
  • 30 Anzahl Walnut halves

Preparation (7 steps)

Chop walnuts and cookies

Thermomix® Setting
5 sec/Speed 5, 8 sec/Speed 6

Put 75 g walnuts in the mixing bowl and chop for 5 seconds/speed 5. Transfer and set aside. Put 75 g butter cookies in the mixing bowl and process into fine crumbs for 8 seconds/speed 6. Transfer and set aside.

Melt and stir butter, peanut butter and powdered sugar

Thermomix® Setting
3 min/122°F/Speed 2, 20 sec/Speed 3 50

Put 150 g butter and 175 g peanut butter in the mixing bowl and melt for 3 minutes/50°C/speed 2. Add 200 g powdered sugar and stir for 20 seconds/speed 3 until a creamy mass is formed.

Stir in cookies and walnuts

20 sec/Linkslauf/Speed 2, 10 sec/Linkslauf/Speed 2 Reverse

Add the crumbled butter cookies and chopped walnuts to the butter-peanut butter mixture in the mixing bowl and stir in for 20 seconds/reverse/speed 2. Use the spatula to push down from the edge and, if necessary, stir in for another 10 seconds/reverse/speed 2.

Chill the mixture

Remove the mixture from the mixing bowl, place in a bowl and refrigerate for 60 minutes.

Form chocolates and freeze

Using your hands, form small portions of the chilled mixture into balls about 2 cm in size. Spread the formed balls on a plate or baking sheet and place in the freezer for 30 minutes.

Melt chocolate

4 min/122°F/Speed 2, 1 min/122°F/Speed 2 50

Put 250 g dark chocolate and 25 g coconut oil in the mixing bowl and melt for 4 minutes/50°C/speed 2. If necessary, melt for another 1 minute/50°C/speed 2 until the chocolate is completely melted.

Cover and decorate chocolates

Stick the frozen chocolates on toothpicks and pull them through the melted chocolate, let them drip off and place them on baking paper. Remove toothpicks and decorate each chocolate with a walnut half. Refrigerate until ready to eat.
