Description

This chicken broth is a warm hug on a cold day. I prepare it often, especially in winter, because it is very comforting and nutritious. The key is to toast the chicken bones before cooking them, a trick I learned from my mother! Adding chicken wings gives it an incredible flavor and body. It is perfect to take alone or as a base for other soups and stews. Also, it is an economical and healthy way to make the most of the ingredients. I hope you enjoy it as much as I do!

Ingredients (7 ingredients)

  • 4 piece Chicken carcass
  • 4 piece Chicken wings
  • 3 l Water
  • 1 piece Leek
  • 1 piece Small potato
  • 1 piece Small onion
  • 1 piece Carrot

Preparation (6 steps)

Toasting the chicken bones

Preheat the oven to 200°C. Place the carcasses and chicken wings on a baking tray and toast for 20 minutes, turning them halfway through so they brown evenly. This will intensify the flavor of the broth.

Cooking the chicken bones

Place the toasted carcasses and chicken wings in the Thermomix bowl. Add 3 liters of water.

Cooking the broth (first part)

Thermomix® Setting
45 min/212°F/Speed 1 100

Program the Thermomix to cook the broth for 45 minutes at 100°C on speed 1.

Crushing the bones

Open the Thermomix and with the help of a spoon, crush the chicken bones to release more flavor.

Adding the vegetables

Add the leek cut into pieces, the small potato peeled and cut into pieces, the small onion peeled and cut into quarters, and the carrot peeled and cut into slices to the Thermomix bowl.

Cooking the broth (second part)

Thermomix® Setting
45 min/212°F/Speed 1 100

Program the Thermomix to cook the broth for 45 minutes at 100°C on speed 1.
