Description

These Spessart-style potato dumplings are a hearty and filling dish that is especially good for the colder months. I like to make them when I'm in the mood for something hearty. The combination of boiled potatoes, egg and potato flour results in a wonderfully smooth dough. The roasted croutons inside provide a surprising crunch. They are a bit more elaborate to prepare, but the effort is worth it! Served with melted butter and fresh parsley, they are a real treat. If you like, you can also prepare them well in advance and store them in the refrigerator before cooking.

Ingredients (7 ingredients)

  • 800 g Potatoes, peeled weighed
  • 1 piece Egg(s)
  • 1 tsp Salt, level
  • 150 g Potato flour
  • 2 tsp Butter
  • 1 etwas Potato flour
  • 1 etwas Parsley, finely chopped

Preparation (7 steps)

Cook and mash potatoes

Thermomix® Setting
25 min/212°F/Speed 1 100

Cut 800 g peeled potatoes into pieces and place in the mixing bowl. Cover with water and cook for 25 min./100°C/speed 1. Then drain the water and immediately place the potatoes in a bowl and mash with a potato masher. Let cool lukewarm.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put the lukewarm mashed potatoes with 1 egg, 1 tsp salt and 150 g potato flour into the mixing bowl and knead for 2 min./kneading level to a smooth dough.

Roast croutons

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Cut bread rolls into small cubes. Add 1 tsp butter to the mixing bowl and melt for 3 min./120°C/speed 1. Add the bread roll cubes and roast for 5 min./120°C/reverse rotation speed 1 until crispy. Transfer and set aside.

Shape dumplings

Moisten hands and take some dumpling mixture, flatten slightly and add a few croutons, press together and form nice round dumplings. Continue until the mixture is used up. Yields about 7 dumplings.

Cook dumplings

Thermomix® Setting
20 min/212°F/Gentle stir speed 100

Bring a large pot of salted water to a boil. Roll the dumplings lightly in some potato flour again and let them slide into the boiling water. Reduce heat and cook for 20 min./100°C/gentle stirring level. Caution: Do not boil, otherwise they will fall apart!

Prepare parsley butter

Thermomix® Setting
10 sec/Speed 2 50

In the meantime, finely chop the parsley. Add 1 tsp butter to the mixing bowl and melt for 2 min./50°C/speed 1 and let it brown slightly. Add the chopped parsley and stir in for 10 sec./speed 2.

Serve

When the dumplings float to the top after 20 minutes, they are done. Remove with a slotted spoon and place in a warmed bowl. Drizzle with the butter-parsley mixture and serve.
