Description

Hearty cheese dumplings, pressed flat and fried until golden brown. Perfect as a main course or appetizer.

Ingredients (12 ingredients)

  • 250 g Wheat rolls from the day before (stale)
  • 200 ml Milk (3.5%)
  • 150 g spicy mountain cheese
  • 30 g smooth parsley or chives
  • 2 Stück Eggs, size L
  • 60 g Onion
  • 1 Zehe Garlic clove
  • 2.5 EL Clarified butter
  • 1 Prise Salt
  • 1 Prise black pepper
  • 1 Prise Nutmeg, freshly grated
  • 1 Prise Marjoram, rubbed

Preparation (9 steps)

Chop onion and garlic

Peel 1 onion (approx. 60 g) and cut into quarters, and add 1 clove of garlic (as desired) to the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 1/2 tbsp clarified butter or vegetable oil and sauté for 4 min./120°C/speed 1.

Heat milk

Add 200 ml milk (3.5%) to the mixing bowl and heat for 2 min./90°C/speed 1.

Prepare bread rolls

Cut 250 g wheat rolls from the day before (stale) into small cubes and place in a large bowl (alternatively, use ready-made dumpling bread from the supermarket). Pour the warm milk-onion mixture from the mixing bowl evenly over the bread cubes/dumpling bread and then let it soak for 10 to 15 minutes.

Chop parsley

Wash 30 g smooth parsley or chives, shake dry, pluck the leaves and put them in the mixing bowl. Chop for 3 sec./speed 6.

Prepare dumpling dough

Add the chopped parsley, 2 eggs (size L), 150 g spicy mountain cheese (coarsely grated or cut into small cubes) and a pinch of salt, pepper, nutmeg and marjoram to the soaked bread cubes. Knead everything well with your hands. The dumpling dough should be quite homogeneous and no longer contain dry bread cubes. If it is too dry, add some more milk. If it is too wet, add 1 tbsp breadcrumbs.

Form dumplings

Use a tablespoon and damp hands to form about 8 dumplings. 100 g per dumpling is a good guideline. If the cheese press dumplings are served in soup, they can be smaller (80 g). Carefully press the formed dumplings flat as desired.

Fry dumplings

Heat 2 tbsp clarified butter or vegetable oil in a pan. Then add the dumplings and fry on each side for about 4 minutes over medium heat. They can be nice and crispy. Degrease on kitchen paper if desired.

Arrange

The cheese press dumplings go perfectly with a colorful salad or served in a clear soup. Garnish with parsley or chives.
