Description

I love preparing these veal meatballs, they are always a success! The combination of ground veal with raw shrimp and grated fresh ginger gives them an exotic and delicate flavor. The preparation is a bit long, but the result is really worth it. These meatballs are perfect for a dinner with friends or a special occasion. They can be served with soy sauce or an Asian sauce for even more flavor. Feel free to vary the spices according to your tastes!

Ingredients (11 ingredients)

  • 400 g Ground veal
  • 300 g Glutinous rice
  • 200 g Raw shrimp
  • 1 piece Egg
  • 0.5 piece Leek white
  • 15 g Grated fresh ginger
  • 1 c. à soupe Sesame oil
  • 1 c. à soupe Soy
  • 1 c. à soupe Cornstarch
  • 1 c. à soupe Rice vinegar
  • 1 pinch Black pepper

Preparation (9 steps)

Preparation of rice and shrimp

Soak the rice in cold water and set aside in the refrigerator. Thaw the shrimp in the refrigerator.

Chop the leek

Thermomix® Setting
5 sec/Speed 5

Cut the leek white into pieces and put it in the Thermomix bowl. Finely chop for 5 Sek./Stufe 5.

Mix the ingredients

Thermomix® Setting
20 sec/Speed 4

Add the ground veal, peeled and chopped shrimp, egg, grated fresh ginger, sesame oil, soy sauce, cornstarch, rice vinegar and black pepper to the Thermomix bowl. Mix everything for 20 Sek./Stufe 4.

Form the meatballs

Mix the preparation quickly until the mixture sticks slightly and form meatballs between your wet hands. Place them in the refrigerator.

Coat the rice meatballs

Coat the hardened meatballs with the drained glutinous rice. Set aside in the refrigerator until cooking.

Prepare the steam basket

Cut the baking paper to the size of the steam basket and pierce it with a multitude of holes. Place the spaced meatballs in the steam basket.

Steam cooking

Thermomix® Setting
4 min/Varoma/Speed 1 Varoma

Pour 500 ml of water into the Thermomix bowl, place the steam basket with the meatballs. Program 4 Min./Varoma/Stufe 1.

Let rest

At the end of cooking, do not decompress the steam for 3 min. Open.

Serve

Serve the meatballs with soy sauce or Asian sauce.
