Description

This beef cheek with onion stew dish is a truly comforting delight, perfect for autumn evenings. The beef cheek, slowly simmered, becomes incredibly tender and melting, while the onion sauce, rich and fragrant, brings an incomparable sweetness. I love preparing this dish because it fills the whole house with warm flavors. Accompanied by steamed potatoes or a vegetable puree, it's a complete and tasty meal that will delight the taste buds of the whole family. Ingredients (12 ingredients)

  • 1 piece clove
  • 1 feuille bay leaf
  • to taste Salt
  • to taste Flour
  • 1 cuillère goose fat
  • 454 g onion
  • 1 branche celery
  • 1 l water
  • 3 piece carrots
  • 3 piece leeks
  • 1 piece turnip
  • 1 piece beef cheek

Preparation (7 steps)

Preparation of the beef cheek

In a saucepan, place the beef cheek and cover with cold water. Bring to a boil and skim. Let simmer over low heat for 1 hour 30 minutes.

Adding vegetables and aromatics

Add 3 carrots cut into pieces, 3 leeks cut into rounds, 1 turnip cut into dice, 1 celery stalk cut into pieces, 1 onion studded with 1 clove and 1 bay leaf. Cook for 1 hour.

Shredding the beef cheek

Remove the beef cheek from the saucepan and shred it with two forks.

Preparation of the onion stew

In a pan, melt 1 spoon of goose fat. Add 1 lb of thinly sliced onions and brown them, stirring regularly.

Thickening the sauce

Sprinkle the onions with 1 spoon of flour and mix. Pour in 2 glasses of cooking broth from the beef cheek.

Simmering the sauce

Let the onion sauce simmer for 30 minutes over low heat.

Reheating the beef cheek

Add the shredded beef cheek to the sauce and heat for 20 minutes.
